Hello and welcome back to The Stone Soup Cook!
I’m having so much fun this week, featuring one of my all-time favorite herbs: basil. This week, I’ve shared some fun facts about this abundant herb and also shared some great recipes, including the cocktail “Sweet Basil Sling,” pesto sauce and summer berry and basil salad.
Today, I’m sharing another salad along the same lines as the one from yesterday, only this time featuring watermelon, honeydew and sweet basil salad:

I love melons, and they’re very good for you, but Mr. Stone Soup has never been a big fan of them, mainly because melons do tend to be a bit of a “one-note-samba,” if you will. They’re sweet, but frequently don’t have much more going for them, other than texture for a fruit salad. With the addition of the sweet basil, honey and lime dressing, this salad turns into a real symphony of flavors and textures. Trust me–Mr. Stone Soup looked at the bowl of fruit skeptically, but once he tasted it, I had to fight to get a forkful of it to taste for myself! The sweet of the melons really benefited from the gently acidic dressing and the herbaceous spiciness of the sweet basil.
I feature watermelon and honeydew melon in this picture, but please feel free to substitute any melons you particularly enjoy–they are all appropriate for this preparation! And enjoy!
Please tune back in tomorrow for a very special dessert featuring, you guessed it–sweet basil!
Until then,
Peace, love and good food,
Keri
