Today, I’m bidding a fond farewell to basil week. I have enjoyed celebrating this wonderful and versatile herb with you and I’m looking forward to experimenting with it more as the summer goes by.
For today’s post, I’m featuring a very special dessert using, you guessed it–sweet basil! The dessert is this gorgeous peach and sweet basil cobbler:

I know this recipe may sound counterintuitive, but trust me–it’s delicious!!
To come up with it, I fooled around with my basic peach cobbler recipe and came up with this absolutely scrumptious take on the classic. In it, the sweet, honey nectar of the peaches is given a new dimension with the spicy clove, licorice and pepper of the sweet basil.
A note: I don’t bother to peel my peaches for my cobbler–I am not offended by the fuzziness of the skin, but if you are, you should remove the skins before baking!
