I am continuing my series on Advent today with a recipe for beet salad. Yesterday, I published a recipe for cured salmon to celebrate Finnish Advent foods. Today, I’m continuing with Finnish-inspired food and featuring a recipe for beet salad.
I love beets and I think they’re one of Mother Nature’s best ideas! Not only do they taste good, but they’re also really good for you. They’re full of manganese, potassium, beta carotene and iron and they provide lots of antioxidants that fight free-radicals. They’re also supposed to have good effects on blood pressure and they’re high in fiber. What’s not to love!

Beets are quite important in the Finnish diet, as growing vegetables is challenging in Finland. Beets, with their impressive health benefit profile, grow well in the climate and the Finnish people embrace them, particularly at Christmastime.
This recipe presents the beets simply with a vinaigrette and is delicious and refreshing. Since creating this recipe, I have learned that there is a Finnish beet salad called Rossoli. I will be circling back to this salad, as it is quite beloved for the Christmas season.
