Quick Fresh Tomato Pizza Sauce
Description
I find the pizza sauce you can buy pre-made at the grocery store to be purely cloying. I mean--what is it with SWEET pasta sauce??! And especially with sweet pizza sauce?
This pizza sauce is simple to make and will come together while you're heating your oven. It takes only about 6 ingredients, and trust me--the only sweetness in this sauce will come from the natural sugar in the fresh tomatoes themselves.
This sauce will make enough for probably two small pizzas, but feel free to make more to freeze for use on an evening when you want dinner to come together in a flash!

In a 2-quart saute pan, heat the olive oil until shimmering, but not smoking. Add shallot and cook for a couple of minutes until translucent. Add garlic and continue to cook for a minute or two until the garlic is very fragrant, but not browning. Add red pepper flakes and cook for an additional 30 seconds or so until you can smell the red pepper.

Add tomatoes and stir to mix. Add tomato paste and stir to incorporate. Bring to a medium simmer, stirring frequently. Once simmering nicely, turn the heat down to a gentle simmer and cook uncovered, stirring occasionally to avoid sticking.

Simmer until the sauce has reduced by about half and has thickened. This will take about 15-20 minutes.
Taste and add salt as needed.
