Shrimp Scampi
Description
This super easy recipe is equally comfortable being served as a stunning main course for a romantic dinner for two (or at a dinner party) or on a weeknight when you have no time to plan or cook. And it's not only delicious, but it's pretty healthy, to boot!

Bring a large pot of salted water to a boil and cook linguine to manufacturer's specifications.

While the linguine is cooking, let's get started on preparing the sauce and cooking up the shrimp.
In a large saute pan (I used my 11" Smithey cast iron skillet), melt the butter and add the olive oil. When hot (but not smoking), add the garlic and saute for about a minute until it is very fragrant, but not browned. Stir frequently!

Add wine, salt, red pepper flakes and bring to a medium simmer. Continue to simmer for a few minutes until the sauce has reduced and has begun to thicken somewhat--maybe 3 minutes or so.

Add the shrimp in a single layer and cook, turning once when each side turns a nice pink and is cooked through--shouldn't be more than a couple of minutes per side, depending on the size of your shrimp.

Serve immediately over the linguine along with a squeeze of lemon and a sprinkling of parsley. Enjoy with some crunchy French bread to soak up that yummy sauce!
