I think we can all appreciate this story: I went looking for my mom's recipe for sweet potato casserole when I was inputting this recipe. I couldn't find it in any of the family cookbooks we have compiled over the years. Finally, I remembered this crumpled blue sheet of paper where mom had transcribed her holiday recipes for turkey, dressing and, yes--sweet potato casserole--for me before I got married. Ha! This sheet of paper is almost transparent with grease and food stains, but--I still have it!!
Pre-heat oven to 350*. Place sweet potatoes in a large pot of salted water. Bring to a boil and cook until the potatoes are fork-tender.
Place potatoes into a large casserole dish. Sprinkle with the brown sugar, toss the pineapple over top, dot with the butter and sprinkle liberally with the mini marshmallows.
Place in oven for 10-15 minutes, or until the marshmallows are melty and beginning to brown on top.
