Persimmon, Beet, Blue Cheese and Fennel Salad

This salad fully showcases the sweet and earthy flavors of persimmons and roasted beets. If you're not a fan of beets, you can easily delete them, as persimmons tend to be the star of the show here. But with all the ingredients, its practically a meal in itself and just looks like holiday in a bowl!

I use Fuyu persimmons for this salad. I find that their sweetness benefits from a nice hit of acid that you'll get from my basic vinaigrette.

  1. Starting with a base of greens, add all ingredients to a large bowl. Present as you see in the picture before adding the vinaigrette just be serving, as the vinaigrette will immediately start to wilt the delicate greens.
