Cheesy Quick Bread

I first made Stone Soup during the pandemic. It was a warm and comforting hug during an uncertain time, and best of all, it used up lots of bits and bobs leftover in the refrigerator at the end of the week. But soup should never be allowed to stand alone. My Stone Soup needed a companion. Homemade yeast or sourdough bread were obvious and fine choices, but I wanted to come up with a bread that was quick and easy to make--one that would come together quickly and bake while I was putting the soup together. Enter: Cheesy Quick Bread. This bread is savory, flavorful and flexible--and best of all, at any given time, you're likely to have everything on hand to make it!

  1. Pre-heat oven to 350*. Generously grease an 8.5 x 4" loaf pan. Prep cheese.

  1. Prep herbs.

  1. In a small bowl, whisk eggs, oil and milk together until the egg yolks are broken and well-mixed.

  1. In a larger bowl, combine the flour, baking powder, salt and chipotle pepper in a bowl. Add wet ingredients to dry ingredients and mix until just moistened.

  1. Fold in cheese and herbs. Do not over-mix this bread! It is a lot like a great, big biscuit--and remember! an overworked biscuit is a tough biscuit. This bread will get tough if over-mixed.

  1. Place dough into the prepared loaf pan and place in pre-heated oven.

  1. Bake for 40-45 minutes, or until the top of the loaf is lightly browned and a knife comes out clean.

  1. Let the loaf sit for a few minutes and then run a knife around the edge of the pan before turning over to release the loaf. Serve immediately with lots of butter!

Note

Be as creative as you want to with the kinds of cheeses and herbs you use in this bread. I've never tried it, but I think it would be great with minced garlic incorporated into the herb mixture.

Feel free to make this bread in muffin tins or a larger baking vessel, just watch the cook time and check for doneness appropriately.

For leftovers, wrap in foil and re-heat on 200-250 for a few minutes.

For future use, you can also make a double batch, make small loaves or muffins and freeze them to defrost and gently re-heat for a quick weeknight add-on to a dinner feast.
