Kumquat Marmalade

Slice the kumquats thinly and remove as many of the seeds as possible.

Add all ingredients to a large saucepan.

Heat ingredients on medium-high and bring to a medium boil. Simmer uncovered for about 20 minutes, stirring occasionally. Lower temperature as necessary to avoid overcooking. The kumquats naturally contain pectin, so the liquid with thicken and gel.

Continue to simmer until the mixture thickens and holds onto the spatula slightly. Take the mixture off the heat. It will continue to thicken.

Place into jars. It will keep in the fridge for a couple of weeks. You can also make extra and freeze it.
