Slice and seed kumquats

Add orange juice to kumquats and stir to coat kumquats with juice. Cover and place in refrigerator to marinate overnight.

Place kumquat mixture in a large, heavy saucepan. Add the rest of the ingredients and bring everything to a boil over medium-high heat.

Reduce heat as needed to achieve a medium boil. Stirring occasionally, let the mixture simmer until it is to your desired thickness.

I let mine boil for almost an hour and got a pretty tight final product, which was to my liking, but you may want it a little looser. This chutney is great with smoked meats--think smoked duck breast, bacon-wrapped anything, pork and chicken. It will also pair well with cheeses, nuts and meats on a charcuterie board.
