Kumquat Chutney

  1. Slice and seed kumquats

  2. Add orange juice to kumquats and stir to coat kumquats with juice. Cover and place in refrigerator to marinate overnight.

  3. Place kumquat mixture in a large, heavy saucepan. Add the rest of the ingredients and bring everything to a boil over medium-high heat.

  4. Reduce heat as needed to achieve a medium boil. Stirring occasionally, let the mixture simmer until it is to your desired thickness.

  5. I let mine boil for almost an hour and got a pretty tight final product, which was to my liking, but you may want it a little looser. This chutney is great with smoked meats--think smoked duck breast, bacon-wrapped anything, pork and chicken. It will also pair well with cheeses, nuts and meats on a charcuterie board.
