Hello and welcome back to The Stone Soup Cook! I’m glad you’re here!
I am continuing my Lenten focus on living simply. This week, we’re going to be doing what my mother calls “coasting in the kitchen.”
“Coasting in the Kitchen” is the practice of making a lot of something one day and then either eating the leftovers as is, or using the leftovers to make new, totally different meals. You all already see me do this when I roast a chicken one day, make chicken salad out of the meat the next day and finally, make chicken stock out of the carcass for soup on a third day. If there’s leftover soup, I might even thicken the soup, add a few new vegetables and make individual chicken pot pies on a fourth day.
This week, I’m starting by roasting a chuck roast:

Tomorrow, I’ll make a pot of beans, which I’ll then combine with some of the meat from the pot roast to make chili. I’ll make beef pot pies one night with leftovers from the roast beef, and on another night, we’ll enjoy the leftover chili with a surprise treat.
