Sumo and fennel salad

Description

In the winter and early spring, we get lovely citrus here in California.  In January or February, start getting this fairly new variety of citrus, the "Sumo" mandarin.  It is a cross between a mandarin and an orange--sweet, seedless and delicious!  When they're in season, we can't get enough of them!

This recipe is a really easy way to showcase their natural sweetness and when combined with fennel and vinaigrette, makes a great texture and flavor salad combo.

Instructions

  1. Combine sumo segments, shaved fennel and vinaigrette in a bowl.  Toss and enjoy!
