A friend of mine who had just learned that she was a diabetic introduced me to this lovely appetizer many years ago. Not only is it delicious, but it’s also elegant, and when served with a glass of champagne, it’s special enough to serve on Christmas or New Year’s Eve! Serve it topped on cucumber slices for a low-carb option, but it’s also delicious when served on water crackers or even corn chips for a more rustic feel.
Smoked Salmon Dip
Ingredients
For smoked salmon tartare

Place diced smoked salmon, diced shallot, diced capers, olive oil, lemon juice, lemon zest and chopped, fresh dill in a bowl and mix thoroughly. Place in refrigerator and let sit for at least an hour, and up to several hours to let flavors meld and develop. Before serving, taste for seasoning and add salt and/or freshly ground pepper as needed.

For Assembly
Place cucumber slice flat on a serving dish. Place about a teaspoon (less or more depending on the size of the cucumber slice) of the smoked salmon tartare on the cucumber slice. Top with a dab of the creme fraiche or sour cream and enjoy!
This appetizer makes a lovely and elegant starter course for any dinner party. It can certainly be served on crackers, but the neutral, fresh flavor of the cucumber plays beautifully with the pungent, rich flavors of the smoked salmon, capers and onions. Plus, serving the tartare atop cucumber slices instead of crackers also gives the added advantage of making this dish diabetic-friendly. Serve it with a glass of champagne during the holidays for a yummy and elegant starter for a holiday meal!
