“Found” Spaghetti Sauce

Description

This is a spaghetti sauce I developed during Lent.  I was practicing "living simply," and using up what I found in the freezer and pantry.  I generally use ground beef and Italian sausage for my sauce.  What I found in the freezer was a pound of ground beef, a half a pound of pork and about 3 ounces of pancetta.  

It's a keeper :)

  1. In a 4-5 quart Dutch oven, add olive oil and onion.  Saute for several minutes until transparent. Add pancetta and saute for 5-7 minutes, until the pancetta is cooked through.  Add garlic and saute for a minute or two longer, until the garlic is very fragrant. 

     

    Add meat and saute until cooked through and crumbly.  Drain most of the fat off out of the pan--leave a little because it adds good flavor.

    Add the tomatoes and stir.

    Add the Tuscan Sunset, seasoned salt and lemon pepper and stir to mix thoroughly.

    Cover and let simmer for about an hour, stirring regularly to avoid any sticking.

    After about an hour, take the lid off and let the sauce simmer for another 30-45 minutes.  Once the sauce has reduced somewhat, taste for seasoning and adjust as needed with salt, pepper, or other seasonings.  Let simmer for another 15-20 minutes and then enjoy with pasta--it works very well with lots of different pastas--my favorites are spaghetti, bucatini and penne.

    Enjoy with a crisp, green salad and a glass of nice chianti--Buon Apetito!

Note

If desired, use some of the meat to make meatballs as follows:

1/2 pound ground beef

1/4 pound ground pork

1 large egg

1/2 cup bread crumbs

Italian herbs, salt, pepper

Mix by hand and shape into meatballs:

Add to sauce and simmer for duration of cooking time:
