Dark Chocolate Pecan Pie With Bourbon and Sea Salt

Pecan pie is my “go-to” dessert and has been for years.  I always say: a good Texas girl always has all the ingredients for a pecan pie in her pantry at all times.  And I’m a good Texas girl.

While I’m not a chocoholic, there are many people in my life who are and they all insist that pecan pie is improved by adding chocolate to it. But the chocolate-pecan pies I have had always have so much chocolate in them that the pecan pie base is totally overwhelmed and the consistency turns from a velvety custard to that of a melted chocolate bar. So I set about to create a chocolate-pecan pie that I could tolerate, and came up with this one. While I still prefer plain pecan pie, this recipe is a nice compromise, utilizing a relatively small amount of very dark chocolate, a little bourbon and sea salt to create a pie that showcases the chocolate without totally overwhelming the rich, creamy caramel pecan custard of the pecan pie base. The shot of bourbon, sprinkling of sea salt and decrease in the amount of chocolate help to cut what I call the “cloy factor” of most chocolate-pecan pies. It also more or less fixes the “melted chocolate bar” consistency in a way that both camps can live in peace in one pie.

  1. Preheat oven to 325*

    Place unbaked pie shell in a greased pie plate and put aside.

    In a large bowl, cream butter with mixed sugar and flour; add syrup and eggs.  Beat until foamy. Add salt, vanilla, bourbon and pecan halves.  

     

  2. sprinkle the chocolate chips at the bottom of the unbaked pie shell.

Pour pecan pie mixture over top of chocolate chips into prepared pie plate and place in pre-heated oven.  Bake for 30 minutes and check--you may need to rotate at this point for even cooking.  Continue to cook until the middle of the pie is just set.  This could take anywhere from 10-20 minutes, depending on how your oven heats.

  1. Sprinkle a little sea salt atop the pie if desired (this will help to cut the sweetness of this rich pie). Enjoy with freshly whipped cream or ice cream.
