Arugula, Tomato and Mozzarella Salad
Description
I discovered this salad at my dear friend's daughter's graduation party. The party was held at this great little wine bar that had wines "on tap," and they served pizzas, salads and sweets to accompany the wines. I went back for helping after helping of this salad. It's simple, delicious and to me, it tastes like summer on a plate!

As you can see from the ingredients list, this is a very casual recipe. If you're making it just for yourself, then use only a tiny handful--making it for a crowd? Use two handfuls! You get it.
Put all the ingredients into a bowl and toss with the basic vinaigrette. Taste, swoon, gorge yourself, repeat ;-)
