An Abundance of Mains and Sides for One

Hi and welcome back to The Stone Soup Cook. This week, I’m featuring recipes for one. I came up with these single serving gems because last week, Mr. Stone Soup Cook was playing with model trains for most of the week, and instead of tried and true recipes, I wanted to challenge myself to come up with interesting and innovative recipes just for me. I hope you enjoyed Monday’s post, where I featured breakfasts for one. Today, I am moving on to main and side dishes for one.

Being the Stone Soup Cook, I wanted to use up what I had on hand, so I started by looking in the fridge and larder to see what I had to work with. I found an eggplant that I’d gotten the previous week and hadn’t used. I had some zucchini, asparagus, grape tomatoes, mozzarella and burrata cheeses, sweet basil (and the rest of the stuff to make pesto), some potatoes, green beans and I had roasted a chicken earlier in the week. I bought halibut the day I was going to cook it.
