Watermelon Salsa

Ingredients
  • 4 cups seedless watermelon (cut into 1/2" cubes)
  • 1/2 cup red onion (finely diced)
  • 1/3 cup fresh cilantro (chopped very fine)
  • 1/4 cup fresh mint (chopped into ribbons)
  • 1/2 jalapeno pepper (chopped very fine)
  • zest of one lime
  • juice of one lime
  • 1 tbsp honey
Instructions

    Put watermelon, red onions, cilantro, mint and jalapeno into a medium bowl.

    In a small bowl, whisk together the honey, lime juice and lime zest.

    Pour lime and honey dressing over other ingredients and toss to combine. Serve immediately, or cover and chill to serve at dinnertime. This salsa will keep until the next day, but probably not a lot longer, as the lime juice will wilt the greens, so enjoy as soon as you can after making it!
Note

Enjoy as a side dish with bar-b-que, burgers, hot dogs or any grilled meats, preferably on a hot, sunny day at the height of summer!
