Keri’s Killer Coleslaw

Description

The summer of 2020 was extremely hot here in northern California, and I was barbecuing meats outside on the grill a lot.  This side dish became one of my "go-to" side dishes.  It's extremely easy to put together and it is DELICIOUS!!

BUT--this recipe depends on your having these pickled vegetables ready for use.  Once you have those, you've got a variety of yummy sides you can make very quickly on a busy evening after work.

This recipe uses some of the pickled vegetables, but more importantly, uses the brine for a dressing for the coleslaw.  And I promise you, you will never taste a yummier coleslaw dressing in all your life!

Ingredients
  • ~2 cup Red cabbage (Sliced into thin strips)
  • ~2 cup Green cabbage (Sliced into thin strips)
  • OR
  • 1 Bag of prepared angel hair coleslaw
  • 1/4 cup Pickled vegetable (Sliced fine)
  • 1/4 cup Pickled vegetable brine
  • 1/4-1/3 cup Mayonaise

    Combine the cabbage and the pickled vegetables in a large bowl.  In a small bowl, combine the pickle brine and mayonnaise.  Pour dressing over cabbage mixture and toss thoroughly.

    Yields 4-6 servings, or just one.
