Glazed Carrots

Description

This is a great recipe to use the bounty of spring carrots.  It's quick, easy and a real crowd pleaser!

Ingredients
  • 1 Bunch of carrots (About 8--peeled and cut into coins)
  • 2-3 tbsp Honey
  • 1 tsp Freshly grated ginger
  • 1-2 tbsp Butter
  • 1/2 tsp Kosher salt
  • Juice of 1/2 lemon or 1-2 tablespoons cider vinegar
  • 1/4 cup Water

    Chop carrots into ~1/4" coins.

    In a medium saucepan, combine honey, lemon juice (or vinegar), ginger, butter, water and salt ad let simmer for a minute, just to let the ingredients combine.

    Add carrots, cover and let simmer, stirring occasionally for 10-15 minutes, or until the carrots are tender when pricked with a fork;  

    Add a little more water if not enough liquid remains while cooking.
