I love melons, and they're very good for you, but Mr. Stone Soup has never been a big fan of them, mainly because melons do tend to be a bit of a "one-note-samba," if you will. They're sweet, but frequently don't have much more going for them, other than texture for a fruit salad. With the addition of the sweet basil, honey and lime dressing, this salad turns into a real symphony of flavors and textures. Trust me--Mr. Stone Soup looked at the bowl of fruit skeptically, but once he tasted it, I had to fight to get a forkful of it to taste for myself! The sweet of the melons really benefited from the gently acidic dressing and the herbaceous spiciness of the sweet basil.

Cut melons and put into bowl.
Whisk together honey and lime juice.
Just before serving, cut sweet basil into ribbons and sprinkle over top of melon chunks.
Pour dressing over top of salad, toss gently and serve immediately.
I show this salad with watermelon and honeydew melon, but any melon will do for this salad.
