Spinach, Pecan and Thyme Pesto

This pesto is so simple to put together and includes ingredients easily located at any grocery store. It's very mild and mellow and makes a great dressing for pasta, as well as mild fish, like halibut. It would also make a lovely accompaniment to a veggie or turkey and avocado sandwich.

Ingredients
  • 2 cups fresh spinach (leaves only--trim off thick stems)
  • 1/2 cup very fresh, roasted pecans (I usually buy my pecans at my local farmer's market and roast them at about 400* for about 7-8 minutes, until they become fragrant and are starting to get a little color.)
  • 2 tbsp fresh thyme
  • 1/2 cup fresh, flat-leaf parsley (leaves only)
  • 1/2 cup parmesan cheese
  • 3 cloves garlic
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup very good quality olive oil (start with this and add more if necessary)
  • 1 tbsp grated lemon zest
  • juice of 1/2 a lemon

    Add all the ingredients to a small food processor. Pulse until the ingredients form a smooth sauce.

    Add more olive oil a little at a time if necessary to reach the consistency that you prefer.

    Use as a dressing for pasta, fish or chicken.
