Sauteed Corn

Description

This is a fun recipe if you're a person who loves corn on the cob, but not the experience of actually eating it off the cob.

The corn is removed from the cob and sautéed in butter with shallots, salt and pepper. The addition of the shallots and sweet basil add an extra dimension of richness to the corn and butter that gives the corn a nice boost in flavor.

Ingredients
  • 4 ears corn (corn kernels removed from cob)
  • 1 medium shallot (chopped fine)
  • 3 tbsp butter
  • salt
  • pepper
  • 1 tbsp fresh sweet basil (sliced into thin ribbons at the last minute)
Instructions

    Over medium-high heat, melt butter in a large, heavy saute pan and add shallots. Saute for a couple of minutes until the shallots are translucent, but not yet turning clear.

    Add corn and saute until tender--about another 3-5 minutes, stirring frequently.

    While the corn is sautéing, slice the sweet basil into thin ribbons.

    Add salt, pepper and sweet basil and stir until the sweet basil is very fragrant, about a minute or so.

    Serve immediately.
