Peach Crumble

Description

By melting the butter, instead of having to cut it in with a pasty cutter, I've simplified this recipe to make it quick enough to whip up even on the busiest of days--and bonus--I actually like the results of this method better than the traditional method!

A note on the baking vessel for this recipe.  I chose to bake this in a 10" cast iron skillet that I've had for about 4 years now.  It has a good, deep seasoning coat on it.  Do not attempt to make this recipe in a brand new cast iron pan--due to the acid in the recipe, it will likely strip the seasoning off.  No fair asking me how I know ;-)

Ingredients
  • 3 large peaches (cut into slices)
  • 1 cup rolled oats
  • 3/4 cup brown sugar (divided)
  • 1/2 cup all-purpose flour
  • 1/2 tsp Kosher salt
  • 1/2 tsp cinnamon
  • 1/2 cup butter (melted)
  • juice of one lemon
Instructions

    Place peach slices into a bowl and sprinkle about 1/4 cup of brown sugar and all the lemon juice on them. Set them aside and let them macerate while you're preparing the crumble.

    In another bowl, mix together the remainder of the sugar, the flour, oats, salt and cinnamon.

    Melt the butter in the microwave, and then pour over the dry ingredients and mix thoroughly, so everything is incorporated.

    Pour the macerated peaches into a well-seasoned 10" cast iron skillet, or a 10" casserole dish. Top with the butter and dry ingredient mixture. Place in pre-heated oven and bake for about 30 minutes, or until the top of the crumble is getting golden brown.
