Overnight Oatmeal

Description

For mornings when one or both of us have to rush off somewhere, I will throw together this overnight oatmeal recipe and scoop it out the next morning.  It's great and versatile--get creative and add new things to make it your own!

Ingredients
  • 1 cup Steel cut oatmeal
  • 4 cup Water
  • 1/4 cup Brown sugar
  • 1 tbsp Vanilla
  • 1 tsp Kosher salt
  • 1/2 cup Dried cranberries/blueberries/cherries ((Optional))
  • Handful (Walnuts or pecans (optional))

    Add water, salt, brown sugar and vanilla to large saucepan and bring to a boil.  When boiling, add steel-cut oats.  Stirring constantly, bring to a moderate boil and let it boil for a minute or two.  Stir in dried fruit and nuts, if using and let it boil for a few seconds.  

    Remove pot from heat, cover and voila!  Your oatmeal will be ready to go for you first thing in the morning!

    I have also substituted 1 cup of milk for one cup of the water and used the same process and it worked and tasted great.
