Loaded Baked Potato

Description

Let me start by saying that for this recipe, I am using leftover chili, broccoli, onions, cheese, and sour cream for this version of a loaded baked potato, but you can use virtually anything for your version of a loaded baked potato. I don't know that I'd go chocolate syrup, but...you do you!

But really, this is a great, quick and easy "one-and-done" meal on a busy weeknight. And when I say it's flexible, I mean it--add whatever leftovers you have in the fridge. In this version, the potato is the starch (obviously), the chili has the nice beans and meat for protein and the broccoli is the vegetable. Enjoy this meal with whatever vegetables and protein you may have leftover from previous meals and you've got a great, satisfying meal!

Ingredients
  • 1 medium potato (russet or Yukon gold will work fine)
  • 3/4 cup chili
  • 1-2 tbsp grated cheese
  • 1-2 tbsp sour cream
  • 1 tbsp butter
  • 1/2 cup chopped broccoli
  • 1 tbsp chopped onion
Instructions

    Bake your potato by whatever means you prefer--foil, no foil, microwave--no judging.

    Saute your vegetables for a few minutes (or microwave, whatever)

    Place your butter and cheese as a base so it gets a chance to melt into the potato

    Continue loading the toppings, ending with the sour cream, if using. Enjoy!
