Honey-Glazed Butternut Squash

This is a great, easy recipe that marries the warm sweetnesses of honey and butternut squash. Enjoy as a side dish with lamb chops, as pictured, pork chops or steak.

Ingredients
  • 1 large butternut squash (peeled and cut into bite-sized chunks)
  • 2-3 tbsp pecan or olive oil
  • 1 tsp Kosher salt
  • freshly ground pepper
  • 2 tbsp butter
  • 2-3 tbsp honey
  • 1/2 tsp red pepper flakes
  • juice of 1/2 lemon

    Pre-heat oven to 425*. Peel butternut squash, slice in half and remove the seeds and any hairy bits that cling to the seed pod area. Slice the squash into bite-sized pieces.

    Place the butternut squash pieces on a cookie sheet lined with aluminum foil. Drizzle with the oil and sprinkle with salt and pepper. Place in pre-heated oven. Check after about 10 minutes and turn if the squash has started to brown.

    Meanwhile, melt the butter and add honey, lemon juice and red pepper flakes. Mix to combine thoroughly.

    Continue to check the squash for doneness--depending on your oven, cook time will only be 20-25 minutes. You want the squash to be soft, but not mushy. Transfer to a bowl and pour the honey-butter mixture over. Toss to coat the squash in the sauce and serve with your favorite protein.

This is a great recipe anytime butternut squash are still available at your local farmer's market, but are particularly good for that first crisp day of fall--when using the pecan oil, this just tastes like fall!
