Grilled Prawns

This recipe is super simple, fresh and a quick weeknight dinner that will impress! I throw the prawns right onto the grill, but you could also easily skewer them if you'd like. Serve with wild rice and a fresh, seasonal vegetable or a green salad and a crisp glass of Sauvignon Blanc out on the patio on a warm summer evening.

Ingredients
  • 1 lb large peeled and deveined prawns or shrimp (tail on)
  • 2 tbsp olive oil
  • 2 tsp freshly squeezed lemon juice
  • 2 cloves fresh garlic (finely chopped)
  • 2 tsp Creole seasoning
  • 1 tsp smoked paprika
  • 1/4 tsp freshly ground black pepper

    Pre-heat grill to between 450-475*. Mix olive oil and lemon juice with garlic, Creole seasoning, smoked paprika and pepper in a bowl large enough to accommodate the shrimp.

    Add shrimp to bowl with marinade and mix to thoroughly coat shrimp in sauce.

    Place prawns on pre-heated grill. Cover and cook for about 2 minutes. Turn and cook for another 2 minutes. Check the prawns--they should be pink and firm at this point, but cook a little longer to your taste if needed.
Note

At this heat, the prawns will cook pretty fast, so watch them carefully!
