Granola

Description

This recipe was inspired by the granola we had when visiting the 29 Palms Inn in 29 Palms, CA on our way home from a road trip.  Breakfast was included with our room and we had to leave very early.  We were delighted to be greeted with not only the yummiest, creamiest yogurt I'd ever tasted, but also with homemade granola.  This is not their recipe (I tried to get it, but...) but after some experimentation, this granola is pretty close, and in any case--it's pretty damned good!  Enjoy it with fresh fruit, some yogurt and maybe a drizzle of honey.

A note: I used pecan oil to make this granola, which was super yummy and very healthy.  You could use any neutral oil to make it.  I didn't try using olive oil because it carries a bitterness with it that might not work with the rest of the ingredients.  But--given it's health benefits, it might be a worthwhile experiment.

Ingredients
  • 1/6 cup honey
  • 4 cups rolled oats (I used Bob's Red Mill extra thick)
  • 1/6 cup maple syrup
  • 1/2 cup pecan oil
  • 1/3 cup brown sugar
  • tbsp vanilla
  • tsp Kosher salt
  • tsp ground cinnamon
  • 1.5 cups chopped pecans
  • cup dried fruit (optional)
Instructions

    Pre-heat oven to 325*.  

    Line a large cookie sheet with parchment paper.

    In a large bowl, mix together the honey, maple syrup, oil, brown sugar, vanilla, salt and cinnamon.

    Fold in the oats and nuts and mix thoroughly, so as to coat everything with the liquid ingredients.

    Dump ingredients out onto the lined cookie sheet and spread evenly.

    Place in pre-heated oven and let it bake, undisturbed, for about 15 minutes.

    Check on the bake and make sure it's not baking too fast--the sugars in the mixture can get away from you quickly.  Rotate the tray if necessary to get an even cook.  Resist the urge to stir the mixture!  Stirring will disturb those yummy crunchy clusters of oats and honey!

    The mixture won't take any more than about 30, maybe 35 minutes to take on a nice, caramel brown color--don't let it go too long.

    Remove from oven when it's done to your liking and let the pan cool completely before breaking the clusters up.  Once cooled, keep in a resealable container and it will keep on your kitchen counter for a couple of weeks.
