French Tian

For those of you who have seen the Disney movie "Ratatouille," about the cooking rat, you will no doubt recognize this dish as the one Ratatouille served to Anton Ego at the end of the movie. I love that movie and this is my homage to that dish.

It includes 2-3 cups of basic Italian tomato sauce. Click here for the recipe.

Ingredients
  • 2-3 cups basic Italian tomato sauce
  • 1 medium Japanese eggplant (cut into 1/4" rounds)
  • 1 Italian sweet, long red pepper (cut into 1/4" rounds)
  • 1 Italian sweet, long yellow pepper (cut into 1/4" rounds)
  • 1 Italian sweet, long green pepper (cut into 1/4" rounds)
  • 1 medium zucchini (cut into 1/4" rounds)
  • 1 medium yellow squash (cut into 1/4" rounds)
  • ~10 fresh sweet basil leaves (torn)
  • salt and pepper
Instructions

    Preheat oven to 350*. Heat sauce in a small sauce pan.

    Slice the eggplant, red, yellow and green peppers, zucchini and yellow squash into 1/4" rounds.

    In a large oval casserole dish, ladle enough of the sauce into the bottom of the dish to cover completely.

    Starting at one end of the casserole dish, begin layering the vegetables in the order listed. Layer around the casserole dish, spiraling inward, until the dish is filled and (hopefully) you've more or less used up your vegetables. Every so often, tuck a piece of fresh sweet basil in between the vegetables. You may need more than the 10 sweet basil leaves listed, depending on the size of your Tian.

    Drizzle with a little olive oil and sprinkle liberally with salt and pepper. Cover with foil and place in the preheated oven. Bake for about 30 minutes. Take the foil off and bake an additional 10 minutes.

    Enjoy as a main or a side with crusty French bread, a nice Sauvignon Blanc and some French cheese.
