Chicken, spaghetti sauce, pasta and burrata bake

Description

So, this is what happens when you have leftover roast chicken, leftover spaghetti sauce and some burrata cheese with a sell-by date of yesterday in your fridge.  I layered these ingredients with some mozzarella and pasta and...well--it was pretty good!  I served it with a nice green salad, and viola!  dinner on a Friday night with what was leftover from the week's offerings!

Ingredients
  • ~2 cup Leftover shredded roast chicken
  • ~3 cup Leftover spaghetti sauce
  • 1 box pasta, preferably ziti or penne (...but you could also use lasagna sheets if that's what you have)
  • 2 cup mozzarella
  • 2 balls of burrata (torn)

    Preheat oven to 350*

    Prepare the pasta according to directions on the box, drain and set aside

    Spray and large casserole dish with Pam.  Put a layer of pasta on the bottom of the greased casserole dish.

    On top of the pasta, add a layer of chicken, then a layer of mozzarella, then pasta sauce.

    Start the process over again.  Finally, top with the burrata and any leftover mozzarella.  

    Cover with foil, and place in the oven for about 30 minutes.  Take the foil off the top and cook for another 20 minutes or so. until everything is heated through, the cheese is melted and the burrata is nicely browned on top.

    Serve with a crisp, green salad and a nice glass of chianti--Buon Apetito!
