Beef burgundy is a deeply comforting dish to have on a cold wintery day. And the beauty of this dish is that you can use almost any cut of beef, and leftovers work just as well, if not better, than fresh meat. For this recipe, I used up the leftover beef I had from the prime rib roast I made for a holiday celebration and added in a few ounces of diced pancetta for extra flavor and savoriness. The dish takes a couple of hours of simmering to let all the flavors meld together, so plan accordingly, but bonus: it fills the house with the most amazingly delicious smells! Serve this with a nice, green salad and some crusty French bread and you're set. A nice cabernet port zinfandel will be a lovely pairing with this rich, warming meal.

It is traditional to add mushrooms and pearl onions to this dish. I didn't have them on hand when I made this dish, and it came out great. If you want to add them to your stew, saute them in a little olive oil and add them to the dish about 15 minutes before the potatoes are done.
